Tracey Cotterell - Director

With over 30 years experience in the food industry, Tracey completed a Diploma in Hotel, Catering and Institutional Management in the UK and her first real job was running the busy kitchen of a family owned and operated 600 year old West Sussex village inn.

She fell in love with Australia after a fleeting visit in 1985 and then met an Aussie bloke in England and guess what - yep fell in love with him too! To cut a long story short she is married with 2 teenage daughters, lives in Perth and is a dinky di Australian citizen.

Tracey has held various positions in her field since migrating to Perth, including heading the pastry section of the outside catering firm Mustard Catering, functions co-ordinator and cook for the law firm Parker and Parker (now Freehills) and being part of the team at Lamonts in the city. These jobs gave her invaluable experience with food and cooking that she is now passionate about sharing with others.

She operated Matters of Taste at home from 1997 and moved the business to commercial premises in 2002.

Carol Gaby - Corporate Facilitator

Carol Gaby has over 25 years' experience in the hospitality industry. She is best known in Perth as the founder of two of its most successful catering businesses - Heyder and Shears and Zest Catering. Zest won numerous awards for excellence under Carol's leadership until she sold the business in 2006.

Her position as Corporate Program Manager sees her using her expertise in business and sharing her knowledge in the kitchen. She is establishing this program as a popular and beneficial team building exercise in Perth. These sessions are designed for small, medium and large businesses who wish to avail themselves of exciting and uniquely different (along with being very delicious!) training and development program.

Carol has a passion for everything connected with food and hospitality. She is a consummate self-taught chef, an experienced event organiser, a well known teacher at Perth's best cooking schools and an enthusiastic supporter of the Slow Food movement. Carol's early background was in education.
